This is a recipe I found while I was looking for some new Christmas cookies to try. The recipe seemed simple enough, and with a couple of modifications, I could eat it too.
You need
200 g peanuts (or almonds, that’s the original recipe)
200 g butter (or margarine, also the original recipe)
200 g sugar
2 dl heavy cream
125 g potato flour
240 g all purpose flour
2 tsp vanilla sugar
1/3 plate (35 g) baking chocolate (not in the recipe, but I added it because I felt that Christmas cookies either need chocolate and/or pearl sugar)
How to do it
Finely chop the peanuts.
Coarsely chop the chocolate.
Mix butter and sugar white and fluffy in a bowl.
Whip cream in another bowl.
Mix the flour and the vanilla sugar in a third bowl.
Mix in the cream, the nuts, and the chocolate to the butter cream.
Sift in the dry stuff.
Mix it, I recommend a spatula.
You’ll now have a quite runny dough, more runny than Swedish ärtsoppa from Coop or Ica.
Make the cookies with two teaspoons on a baking sheet lined with greaseproof paper.
Bake for 7 to 10 minutes at 200 °C (392 °F(.
Cool on a grate, then enjoy.
This recipe gave me 67 cookies when I made it, but that depends on how big or small you make them. They were a little crispy on the outside, and very fluffy on the inside. It made me really happy eating one. Or five.

Hello
Some beautiful recipes that remind me of time spent in Scandinavia when working for Ericsson.
However, some seem to need a password – why is that, and how can I get the password, please.
With kind regards
John Moran
They ended up password protected because it wasn’t my place to share them with the world, but I still need access to them on the go, so I just put a password on them. Sorry for that.
